A New Year, A New You

It’s a new year, which means new resolutions have been made. Many times people can’t stick with their goals past January, which I found to be the case with my 2011 resolutions. I have one that is not only easy to keep for 2012, but will also help you lose weight, be healthier and even make a slight global impact. Join meat free Mondays and eat vegetarian once a week.

Graham Hill, founder of the website Treehugger, explains in this short video why he became a weekday veg. His website even lays out weekday vegetarian meal plans making it a little bit easier on those who are just beginning, or even spicing things up for us veg-heads. One of the recipes on this week’s plan comes from a blog called Chow Vegan. I’m going to try the Tribe Hummus-Crusted Baked Tofu this week, partnered with oven roasted potatoes and steamed asparagus. Another blog that I’ve been getting recipes from lately is Get Crocked by the Crock Pot Girl, which has an entire vegetarian section. I’ll post the recipes I’ve tried with my suggestions soon.

So, get on board with eating vegetarian at least once a week and you’ll start feeling like a new you in 2012.
